carrot cake

salam,, this is my note :)

2 1/4 cups unsifted all-purpose flour
1 1/2 cups sugar
2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup oil
3 eggs
1/2 cup milk
2 cup shredded carrot
1 1/2 cups flaked coconut
3/4 cup chopped nuts
1/2 cup currants or raisins

1 package (3 ounce) cream cheese, softened
2 tablespoons butter or margarine, softened
2 tablespoons milk
1/4 teaspoon vanilla
dash salt
2 to 2 1/4 cups confectioner sugar

preheat oven to 375 F. oil and flour 13*9- inch baking pan. set aside

mix flour, sugar, baking soda, cinnamon, nutmeg, and salt in large mixing bowl. Add oil, egg, milk, and carrot. beat with electric mixer at low speed until ingredients are moistened, scraping bowl constantly. beat at medium speed 2 min, scraping bowl occasionally. stir in coconut, nuts, and currants.pour into prepared pan. bake at 325 F , 55-60 min. or until wooden pick inserted in center comes out clean. cool completely on wire rack.

for frosting, blend cream cheese and butter in small mixing bowl. add milk, vanilla and salt. mix well. stir in enough confectioners sugar until thick enough to spread. spread on cooled cake.

one 13*9-inch cake :)
